Ricci di Mare (Sea Urchins)

One of the treasures of the sea, Ricci (sea urchin roe), is a delicacy that is very popular with Sicilians and Sardinians alike and also with me! I love this stuff!


The taste is rich, buttery, slightly sweet and with a hint of the sea. Who knew roe could taste this good!

Ricci Bruschetta. 
Simple, pure, delicious! 
Grilled bread, topped with ricci and a touch of parsley

Heaven. 
I will seriously have dreams about this fantastic fresh pasta with ricci. 

Spaghetti con Ricci
Extra Virgin Olive Oil
Garlic, cut into small chunks
Crushed Red Pepper
Ricci (I would estimate approximately 5-10 ricci per person)
Parsley, chopped
Fresh Spaghetti

1. Heat oil in pan and add garlic and red pepper. Sauté for 1-2 minutes and add in ricci and remove from heat. The ricci should only barely touch the hot pan.
2. Cook spaghetti al dente.
3. Add pasta to oil mixture and toss together.
4. Garnish with fresh ricci and parsley.

This will blow your mind!
